Full of Beans: 5 Ways to Eat More Legumes
From kidney beans to chickpeas, the humble bean is an incredibly versatile food that can be eaten in a huge variety of dishes. We should all be eating more of them - swapping out meat for beans is an easy way to slash the carbon footprint of our diets, as they create 90% less emissions. Plus, beans are nutrient-rich and full of protein, so what’s not to love?
From snacking to family dinners, here are some great ways to incorporate more beans into your diet.
1. Dip In
Sure, you’re probably familiar with hummus, but what about making a dip with white beans and garlic, a black bean tapenade, or a spicy kidney bean dip? They’re easy to make and go great with chips, bread, or as a side.
2. Add Beans to Your Greens
Salads need protein too! Whether lentils or chickpeas, adding some beans will make your salad more substantial and flavorful.
3. One-Pot Meals
Try a lentil dahl or chickpea chana masala, a bean chili, or minestrone soup. Make a big pot for plenty of leftovers to enjoy throughout the week. Easy, cheap, and delicious.
4. Roast as a Snack
Feeling peckish? Drizzle some beans with olive oil and spice them as you like, then pop in the oven for a tasty and nutritious quick fix for hunger pangs.
5. Room for Dessert?
From chocolate mousse to gooey brownies, black beans’ creamy texture makes them a great healthy addition to many desserts.
Giving Old Vehicles a Green Revamp
Despite their sustainability credentials coming out on top in the long run, manufacturing an electric car, unfortunately, creates more emissions than it does to manufacture a petrol or diesel car. As a way of combating this issue, entrepreneurs around the world are giving old cars, boats, and even planes a sustainable upgrade, swapping out their gas engines for electric batteries.
While the conversions cost between $21,000 and $44,000, owners will make this back within a few years through the money saved on fuel. This is a win-win in the fight against climate change - both cutting the emissions and air pollution that come from guzzling gas and giving old vehicles a second life.

Helping the Chicken, Deer, and Frog Cross the Road
Human-made infrastructure like roads, fences, and canals are often designed without thought for our non-human neighbors. Animals are often displaced or hurt by the things we construct, with millions killed by cars every year. In the midst of a biodiversity crisis, we need to do everything we can to limit the impact of our infrastructure on animals’ health.
By studying their migration patterns, we can figure out where our roads and other obstructions intersect with animals’ movements, and then build wildlife crossings to aid them in their travels. In practice, this might look like building an overpass over a highway, establishing a strip of wilderness for migratory birds and butterflies, or removing dams so salmon populations can thrive.
These wildlife corridors are a small but profound step towards creating a world where humans and animals can live side by side.
